Odd almost overheat condition.

So I was on my way to grab lunch today and noticed that my ac was humid and not very cold all of the sudden. This happened rather quickly into my drive. I turned the radio off and heard no sounds like a fan belt squeal. I then looked at my gauges and saw my coolant temp was on the second line from red. As I was looking for a place to pull over, but before I could. The ac was blowing cold again and I actually watch the temp gauge go from near red overheat to center normal spot of the gauge in 3 seconds. This happend twice today. It is so odd. Could it be the water pump or maybe a sticking coolant thermostat? I looked it over when I got home and see nothing obvious. Anyone else have this issue before? Is the temp sensor near the thermostat?
 
Given that it's a Toyota, I suspect the instrument panel voltage regulator (if GXs have one). Recall that on FJ60s/62s, the temp and gas gauge needles can spike alarmingly for 5 seconds and then return to normal. My FJ62 does that to this day, and it scared me half to death until I got used to it. Watch for it again and maybe bring along an IR temp gun and go shoot some temps on the engine and radiator and convince yourself that it is (or isn't) overheating.
