What did you use for new gearing?

Nitro brand 4.56 gears from JustDifferntials.com It's lower highway gearing than stock, but my truck is very heavy in addition to the 34" tires. I'm happy with the results. Next time I'm in NM you can drive it if you want.
 
... They aren't shiny but Mark has some stuff you can rub on them that will make them gleam like a baby's butt.

Whew! I'm glad you weren't talking about me because my wife's truck/mini-van's tires aren't shiny right now. I haven't washed them in a couple days.

Getting a chance to try a re-geared FJ would be nice just to see how it feels. It wouldn't be good to regear one way and then wish I had done another. I want it to crawl ridiculously slow in 1st even when I apply the gas pedal, but I still want it to accelerate fast and be somewhat fast on the highway. I don't know what will do that for me; is it too much to ask for all of that?

A really low crawl ratio must be addressed in the transfer case, while typically you re-gear your diffs to regain highway performance after fitting larger-than-stock tires.

I have an Inchworm "Lefty" 4.71:1 transfer case in mine; I ended up with a 76:1 crawl ratio (just more than double the stock one) and I'm very happy with it for the kind of wheeling I like to do.

Pros:

Crawl ratio; low-throttle control up and down steep obstacles.

Increased clearance by 3" & break-over angle under the truck.

Can install it yourself if you're reasonably proficient with tools.


Cons:

You will shift a lot between high and low range on the trail since low-range is now very low and slow. You tend to find yourself at the rear of trail groups so as not to annoy others with your slow speed and/or constant shifting.

The big gear on the low-range set is so tall that it carries oil up to the top of the case near the shifter, where it sometimes leaks a little out when in low range.

Some of the install modifications are not easily reversible if you decide to go back to stock later.
