Must see/do/eat/drink in Denver, Boulder

Hey Folks,
Emma and I fly out Wednesday for a week in Boulder / Denver. Hoping some of you might have some suggestions, although I already have a pretty long list. I'm hoping to find some hole in the wall, non tourist-trap joints. We are catching a couple of shows at Red Rocks and one in Boulder, so the other nights we'll just be hitting up bars and such. Hate we missed you all at LR, looks like it was a BLAST.

I've been a few times and can give tons of recommendations on breweries and good eats... if you like beer and meat that is ;) can't remember but I think you went tea totaler and vegan right? LOL

I'd also get up into the mountains if you can.

Yeah Al, just shoot me because I'd starve a slow painful death as a vegan. We are going to hike some out of Boulder for sure, and probable take a trip to the Rocky Mountain NP one day. I was hoping some folks would have some hole in the wall type recommendations - so yeah, @southerncruiser62 shoot me Brett's digits if you will.

I am in Boulder twice a month and find it hard to find a great place to eat. With a 1.6% unemployment rate, the lowest in the country, the food/service at restaurants seem to reflect the fact that people know they can't be fired. I would suggest going up to Estes National Park, great scenery there. I hear that the restaurants in Denver proper are far better.
 
Do a tour - we did Banjo Billy's - you can drink and ride. Tours are always a good thing to do even if its cliche - just knock out the historic stuff.

Go to Casa Bonita! Gotta do it once. Horrible food, but worth it!

Get a B-Bike near the REI and drive around LoDo.
