By "stock engine", I mean not swapped, i.e. all the stock bits for water pump, fan, rad, hoses etc are laid out to work with engine driven fan vs a swap where alignment may not work, or there may be no provision for engine driven.

Test: as RedFJ40 says, or I've heard of testing to see if a rolled up newspaper will stop the fan when idling hot. My usual test is to run the truck til it pukes coolant, then test to see if tightening a hose clamp between the clutch hub/studs and clutch body (effectively making it a solid fan mount) makes the issue cool off.
 
BTW, if you try the hose clamp trick, you'll learn how much power a solidly driven fan can suck at higher rpm, and realize how little a properly working fluid clutch draws normally.
