It’s such an awkward driving position.

Well, it's kind of hard to tell from your picture but my pedal just measure 4" off the floor and that is with an aluminum pedal cover on there too. It looks like your's is sitting a little high. Possibly bent upwards by the previous owner.
No problems with the accelerator I presume other than pedal height/position?

That’s good to know. Here’s another photo. It’s essentially the same height as the brake pedal, if not a tiny bit higher.

I just went and looked at two separate FJ60 gas pedals, both are about an inch lower than the brake pedal.

Someone for whatever reason bent the pedal. I bet it is awkward to drive like that.
