I've been using standard bearing grease from napa for years for pedal and headsets, and bolt threads. A lighter grease or heavy oil for freewheel pawls. And a light grease for suspension pivots.
 
I've rebuilt many bikes and have always used Phil Wood Waterproof Grease. $11 for a tube on Amazon.

I still have the first tube in my top box that I bought from Phil himself back in the 70's (although I've purchased several more tubes since then)
 
Park Tool PolyLube 1000 is a standard, go-to grease in most shops. Phil's Waterproof Grease is awesome, but you may want to save that for just the headset and bottom bracket, as PolyLube is cheaper.
