Looks good to me. The first photo looks like the teeth might be a bit towards the front of the ring gear teeth but IIRC that’s acceptable. It’s been 4 years since I’ve set gears so take it for what it’s worth, but I’d be happy with that pattern.

If I loosen up the backlash it moves a little further to the center, so I'm hoping as it wears in it'll center up. I don't know if that's common practice though?
 
I think you're fine. Just get a new magnetic drain plug, fill the diff let it bur in for a tank of gas or two then drain and fill. Repeat after another 1500 miles then 5000 miles. I'd bet that by your third drain and fill you won't see any crazy wear.

I set all mine by feel and paint and have never had any issues,
