A couple of times lately I have gotten back in shortly after parking my '60 and noticed this fan clicking off and on rapidly...although it seems to run fine immediately after being parked. Is this normal as the temp decreases in the engine compartment and I'm just not usually there to hear it?
Exhaust/brake fan ?

Out in the streets, they call it murder!
That's your carb cooling fan, and the rapid clicking off and on is not normal. Have a look at all the connectors/wires for solid and clean contact, for starters.
