You may want to run Fins-n-Things to just get used to driving on the slickrock, but it's a super easy trail. Stay away from Porcupine Rim trail unless you are biking it--otherwise there will be WAAAAY too many bikers and hikers in the way of you driving your rig. Trust me, it sucks.
FWIW, I took my 2 inch lifted, 32x11.5 runnin', open-diffed, otherwise stock FJ60 on Poison Spider mesa to gold bar rim and golden crack and whatever other trail it is that it connects to and the only issues I had was that I had to get a yank to finish crossing the golden crack and I hit the ass end here and there when I stepped off stuff. If you do Poison Spider Mesa by itself (don't go on to Gold Bar Rim) then you should be fine there also.
I also took my rig in the same configuration on Hells Revenge. Ya, I didn't do every obstacle, but the only things I by-passed were the escalator and the hot tubs (I think). And I was following around my buddies who were all in TJs, all lifted with 33s to 36s, all locked front and rear, all with tera-low. Needless to say, they stopped giving me s*** about my Cruiser after that (dumbass ignorant Jeep guys...)
Do some searches on Google for Moab Trail websites and look for ones listing the trails and get yourself a map of the trails. Try fins-n-things (if you wanna pay the 6 bucks or whatever to get in the damn area) or go to Poison Spider and get a feel for your rig and the terrain. Then think about what other trails you might be able to run (based on their ratings and such).
