One job in the pipeline (excuse the pun) involves removing the fuel tank. I have never seen a set up like it. Multiple pipes going to and fro the tank from the filler neck. I am used to the main filler and a single breather pipe. My question therefore is can I 'delete' the other pipes and have a simple filler and breather combination. Why are there so many pipes?

I wouldnt touch it unless I fully understood it. It always works, never fails and has no effects on HP etc. You may even find there is a legal requirement to keep it intact.

On my diesel thee was a bewildering array of pipes too.
Some were related to injector leak pipes.
I made no attempt to fully understand the set up and simply replaced the tank, hoses and some of the pipes.
Here's the list for all the tank related stuff from Toyota.

Remember the fuel tank has the important job of serving to cool the injection pump and injectors. The fuel return is critical to this function. Remove that and you'll cook your injection system.

Remove some of those other lines and you might have problems filling at the pump (fuel displaces air; air has to go somewhere). Also, when driving, the tank can build a vacuum as fuel leaves if there is not a proper breather. This can starve the lift pump in the injection pump.

In a nutshell, don't change anything!!!
