computer mapping outside USA

What are the recommended computer based mapping products for Canada, Mexico and perhaps even Central and South America? I use Topo for the US but don't know what else is out there.

Initially I'm interested in Canada and Baja. Mainland Mexico down to Cancun later. Ushuaia in a few years maybe.

Garmin has some maps that are ok.

check out newcruiser.ca he has some russian jet-fighter topos that are super-accurate.
