Just ordered the Cerakote plastic restorer wipes. Does anyone know if they can be used on the interior plastic? I don't see why they couldn't.

I'd look at the manufacture's instructions/recommends.
Cerakote usually has VERY specific instructions for their products.
If it’s the semi-porous plastic, yes. But if its the smoothened plastic finish it will leave a streak on the surface. And once that ceramic in liquid form dries up to a solid material, it’s permanent.
Also cerakote will leave all plastic glossy... for a long time. If that’s your preference go for it. Most all of the interior plastic is matte surface( by design). IMO- I wouldnt use it anywhere on the interior.

IMO I wouldn't apply Cerakote to the interior. That is made for plastic trim type pieces for the exterior. Before applying that to anything on the interior read the instructions/contact Cerakote to provide more info on doing that.
Also a good vinyl/plastic protectant I use when detailing is the 303 Protectant.
