What are a couple of easy dinner ideas? I'm going to the Owyhee desert for four days and I want to keep it simple, but good. I plan on pre-cooking some beans and ribs, other than that i'm undecided. This will be over a camp fire.
 
sausage, tortilla, cheese, mustard.

onion and bell pepper if you are feeling fancy and want to use a cast iron skillet

Waaaay out there, where the south fork and the east fork come together. Don't tell anybody.

Im bringing the stuff for shore lunch fish tacos and we might eat a rattlesnake or two if we have too.

I like to cut up some taters toss them in some foil with salt pepper garlic and butter and cook em in the campfire:) mmm

note to self: make sure you pierce the can before you sit it beside the campfire to warm them up. BOOM.

this was of course the mistake of a teen ager.
 
Dinty Moore, seriously good quick stuff after a full day and need something easy.

Add Tobasco and tortillas to go with, Mmmm.
 
No camping trip is complete without some Vienna Sausages.
 
Rack o'lamb...cut the rack into 2-bone lolipops before you go; quick to grill and any leftovers make a fine lunch the next day. Ditto for a small foil tin pan of scalloped potatoes prepped and cooked before you go...easy to reheat and no cleanup.
 
We pre-prepare the whole trips worth of meals and freeze whatever can be. Everything in foil, straight in the fire pit, manifold, etc.
 
Well everything went good. First night in camp we arrived at about 10 o'clock, cooked some basque chorizos. Second night ribs n beans. Third night, 10 minute old fish tacos with bass fillets, jalapeno potatoes, and bagged salad. All washed down with lots of beer and an occassional water. We should keep this thread rolling, hunting season is just around the corner. Thanks for the great ideas.
 
Pre-cook some big cubes of steak. When at camp, combine with onions, potatos, peas, or whatever, then wrap in foil and cook over the fire.

Upscale hobo potatos.
