Any insight on head unit upgrades but I'd like to keep the rear screens working for the kiddos
 
I think all of the units discussed on this forum (Beatsonic, EC Offroad, Custom Car Stereo System, etc) retain the OEM rear screen functionality. Those rear screens are almost completely independent of the front console (other than the DVD player), to the point where the aftermarket carplay / android auto units actually have no way to take control of the rear screens without physically connecting them together with an HDMI cable (using the existing HDMI port in the back).

You just have to avoid the units that completely replace the front console screen, buttons, DVD drive, etc, since then you never know what functionality will be included.
 
so your HDMI IN should work. Try plugging in a nintendo switch or an iPad with a HDMI out converter

The HDMI OUT was tricky.
So after trying a billion combos and opening the unit and checking the ribbon cable and sending the unit back to be told its all fine

I plugged an HDMI cable into the out port

then it goes into one of these HDMI signal boosters:

If you cant get this try to get something equivalent. It is powered by USB so you can plug it into one of the ports on the GROM

Then the another cable goes into the HDMI port in the REAR Center console.
I actually opened it up the panels on the console and internalized the port and plugged it in so that kids don't step on the plug sticking out.

Then with your remote set the rear screens to HDMI input and should work
