[I'll title this as "best overlanding mods" though what I'm really interested in are "the best things you do can easily to your tailgate, trunk, and rear bumper to improve your camping experience". Adding additional drawers, fridges, etc are fine but not really what I'm after here. A trasharoo would be a good example though (and I do have one of those)]

I recently installed a dual swingout rear bumper. I've got a single drawer with a table that slides out from underneath the drawer, which we routinely use to eat lunch when we're back from a hike. I picked up one of those nifty electric faucet pumps for $10 off Amazon this week so we can get drinking water out of the 5 gallon jugs without having to lift them out to tilt. (I do like @Markuson's 3/4" water spigot idea but I wanted to be able to use all 3... plus for $10 I get the coolness factor of it being electric).

After seeing that my wife suggested we put together a simple kitchen so that we can do a bit more food prep/cleaning/etc when we're not at the trailer. Also the 5 of us will wrestle for use of the trailer bathroom in the morning so having a secondary place to brush teeth or put on/take off contacts is a plus. There's an interesting cutting board/collapsible sink on Amazon that I may pick up (along with a mirror), but then I got to thinking about how to make easy use of the space I have.

Things which easily mount to the swingout get a +1. For instance if I could find a table which would mount behind my jerry can holder and fold down to provide a place to put the aforementioned sink, that would be swell. (Note: This one would almost work, but it's ~27" wide and the jerry can holder is only 21" wide). Or a stove that would fit behind the spare and fold out.

Sub-$100 ideas get a star, because we could all drop $10k to have someone custom-fab a special swing out kitchen but finding the one with an almost perfect fit off Aliexpress for $29 plus shipping deserves a medal.

There is a cheapy light on Ali express that fits in that little access panel in the upper tail gate. I have it and it has a little battery that I think charges off the main system so that you have a few minutes of light even with the engine off.

I installed some KC cyclones using the flush fit mount. And plan to wire that to my AUX battery.

The Luna light bars are popular too. I have a set like the ones that slee used for the heritage build. But decided the KC cyclones looked nicer.

There are cool little foldout tables that hook over the tires that might be a good option for your setup. Could even mod it so it works on the spare…
 
I have Dissent swing outs with the locking cabinet and jerry can holders on the beck side of that cabinet. Using the water from one jerry to a 12v pump and hose attachment has been really handy for washing up hands, kids, nasty boots, showers, etc

. It’s an idea I got from a user in here, if I can find their thread I’ll post it.
 
I built a fold down shelf out of a wire storage shelf ($25). The shelf is made in a variety of sizes, I used 30x18.
This version uses a stainless bar woven to the shelf as the pivot, some heim joints at the ends, and is just attached to places that fit behind the tire on the swingout. Using a baby sized latch for closure
The hinge stuff was $30 or so.
Still deciding how to best support it, for now a piece of aluminum angle in the right length works fine.
I’m adding a drawer based cutting board shelf to my reef drawer this summer. I expect between the two surfaces to be able to cover most needs.

Apparently I don’t have much in the way of pictures. I’ll try to get some better ones.

I did try to use a fold down shelf for a Jeep rear door panel replacement. It was around $75. It was slightly too deep for my swingout to close, but it might work on a TLC with the flatter tailgate design.

Within my group, I'm usually the stuckie doing trail lunches for 14-24 people. I prefer hot lunches and the group doesn't mind having a break for some good eats. Working out of the car has to be manageable, especially supporting a group this size. A 22" Blackstone griddle is my key cooking partner with lots of cooktop space, 24k BTU, easy to clean, and earns it's space as I don't carry other pots/pans outside of a coffee percolator. For trail lunches, I'll commonly do hamburgers, pulled pork/beef sandwiches, quesadillas, or recently chicken salad on a toasted croissant as it was 95 degree out. It's great for more complex meals as well with the ability to steam, grill, sear, braise, etc.

Other parameter for me is keeping the rig as light as possible. Storage and organizing solutions that add more value than they weight, as I don't want to have the burden of too much weight while enjoying off-roading.

Custom fabbed swingout. Lower box/water carrier is probably about 40lbs (not including water/gear). Add-on upper basket section for longer trips, prob another 30lbs.

Yes, you should! The San Juans are especially good for testing that long travel flex you're working on :).

We're going to hang around for 2 weeks this time. After LCDC we were planning to head up to Grand Teton and then Shoshone NF but with all the rain they got around Yellowstone so much of the Shoshone NF was closed we're just going to bum around CO for a while (Well most of us... my daughter will be staying behind with my sister).

Been talking about trying to do Death Valley and Joshua Tree this winter around the holidays as well... we tried 2 years ago but CA cancelled our reservation due to Covid. So maybe I'll make it out to your neck of the woods one of these days

That reminds me I have some RV lights to install in my upper tailgate. I have something very similar in my trailer and they work well. I originally wanted to tie these to the light circuit but I may relent and steal power from the trunk handle which is always on because I've already run one wire through the hatch and it was such a PITFA I don't think I want to try it again.

I butchered, lengthened, and reworked a Yakima hitch swingout that is no longer recognizable. It wouldn't be very usable as purchased. But there is a possibility a Kuat model could work based on what I learned from re-configuring.

I’ve got a Wilco hitch gate with a riser and a fold up mini hitch carrier that I leave on all the time.

And I recently picked up a driver side kuat swing away (and a hitch drop down) for a larger carrier (with bike rack feature) for when I’d like a little more storage. I haven’t road tested it yet, but I think it’ll be good for road trips…the Wilco and mini carrier, especially when folded up, I think will be fine for more trail oriented trips and when towing.

Picked up this 5 gallon water tank/sprayer from Walmart. $100. It runs off their Hart 20v batteries (which there are adapters available for other 20v) or 12v from the vehicle.

Works well for me, as my camping is infrequent. Good for hosing down paws and shoes. Would be simple to setup as a shower.

I highly recommend DV if you're out there, we went back in April with the truck and bikes, awesome stuff.

Nice. We'll definitely go at some point. It'll have to be over a winter or maybe spring break as I need the kids to be off school and summer is a no go when temps are 130F
 
The Kaon shelf has been surprisingly handy if you don't need your 3rd row. I mounted a tire table underneath for when more flat space is needed.

For camping we use this Sherpa Table & Organizer and More | Camp Chef - https://www.campchef.com/sherpa-camp-table-%26-organizer/CC-MSTAB.html for portable kitchen to setup, it works well, but it does take up a bit of space. I haven't gone the drawer route yet, but that may be next.

The other item I've started looking at is a new line of storage bins from REI that works with nested storage cubes

I need half my trunk, can I get half a shelf?🙃

I kinda want to fab up a half cage for my trunk. ARB and others make full dividers but I need access to the passenger’s side 3rd row somewhat regularly. I’ve not found anything which would provide for just half though
