Next time you fire up the smoker and have some extra space try this for a treat.

Take some thick cut bacon and seperate into 2-3 slices stuck together. I've seen some just throw a whole slab on with out seperating but I like my bacon a little crunchier so 2-3 slices at a time works for me.

Place on the grate after temp is up to 225 - 250.

Sprinkle a thin layer of brown sugar over the top of the bacon.

Let cook for about 2 hours or until cooked with a nice dark glaze.

What you get in some of the best bacon I have ever tasted and what my :princess: calls bacon candy. Next I am going to try some of it in a baked beans recipe.
 
If you want a little twist on your bacon candy, try adding some cajun seasons or Emeril's BAM pluis some black pepper to your brown sugar, then rub down your bacon with that! Mighty tasty all by itself and great on a BLT or Burger. "Best bacon ever" claimed by my kids!:bounce:

I have some Emeril's and will give this a try. :hmm: I also have some Bad Byron's Butt rub that might be good on the bacon.

I actually stumbled on this while seasoning my smoker using bacon. I read about a championship BBQ team that uses bacon to season any new smoker and they get great results. Not that I need an excuse to cook bacon but I haver noticed a marked improvement in the taste of my ribs. :D
 
You can goggle Emeril's BAM recipe and make it yourself at home quite easily. I keep it on hand at all times. You can also bake the bacon at 400 degrees for 20-30 minutes, on a broiler pan with excellent results as well. Turn it over once and keep an eye on it so it doesn't burn.
