Next time you fire up the smoker and have some extra space try this for a treat.
Take some thick cut bacon and seperate into 2-3 slices stuck together. I've seen some just throw a whole slab on with out seperating but I like my bacon a little crunchier so 2-3 slices at a time works for me.
Place on the grate after temp is up to 225 - 250.
Sprinkle a thin layer of brown sugar over the top of the bacon.
Let cook for about 2 hours or until cooked with a nice dark glaze.
