Fine, I'll try... but you'll quickly see this question is too broad.
The stock oil pressure sender is 1/8" BSPT. There is a row of identical unused ports nearby that you can use if you remove the plug. To fit 1/8" NPT (Autometer) to 1/8" BSPT you'll need an adapter - google for exactly that and you'll find plenty of options, or you can overpay and buy an Autometer 2269 for $15. There are larger ports available on the filter assembly, but I don't know if any of us have ever traced which ones are blocked by bypass valves and which are part of the main circuit.
The stock water temperature sender varies by year and market, there were several flavors of thermostat housing with different sizes and even quantities of ports. They'll be at least 1/4" BSPT, or maybe even 5/16" BSPT. The Tstat housing is pretty shallow anyway, most mechanical gauge probes I've seen are too long and won't fit.
There are also at least two 1/2" BSPT holes (presently plugged) in the head itself, opening to deep portions of the water jacket. You can use 1/2" NPT in 1/2" BSPT without any adapter, though you should use teflon tape. I installed my mechanical probe in one of these holes, its plenty deep. You can also T off of the heater lines, at the head or at the water pump. Both are 1/2" BSPT again.
For all of these holes you MUST pull the plug and checked the depth vs the depth of your sender. I know there is plenty of depth in the 1/2" holes in the head, and very little depth in the Tstat and oil gallery holes. You've really gotta take a look...
