Any opinions on running roller tops on both drawers vs just one? Obviously I only require one for the fridge, just trying to future proof my build. Thanks!

The roller top doesn't extend out that far. If your fridge opens the short direction, you might not be able to open it up all the way. Consider mounting the fridge on the trunk floor. Much easier to access items inside.
I'm not a huge fan of the roller tops unless you are going to build some kind of shell around the fridge. Otherwise, you pull the roller top open and anything sitting on top can now fall into the open/exposed drawer and prevent you from closing the roller-top. If you build a fridge compartment or divider, they work decently well and despite not coming out too far, they come out plenty far to access the interior of the fridge imo.
