I hate those f'ing easy outs just like the rest of you, but a real cool mechanic friend of mine showed me this one time. Take the stripped whatever and drill a hole in the center of it. then get a torx bit that is a tight fit in the hole (you have to hammer it in there a bit). the little teeth on the hardened torx bit kind of bite into the metal and it is a much more positive engagement than the easy out. i though it was a cockamamie iidea too, but it works pretty well almost all the time. oh, and i bought a cheap set of torx to use for this alone. this wont break a really seized bolt loose though.
 
If it is stuck in cast iron, like the head, I just weld a nut on the end with 7018 rod and crank them out. Gets them all.
