Fergging thing,

I've got most of the vacuum lines disconnected, have removed the headbolts, rocker arms, altenator, engine mount (on left side), several of the bolts from from the bracket which attatches to the serpentine belt pullies, and pretty much all of the other random things connecting the head to the block - BUT...I am not able to seperate the block from the head. I think there is something holding the head on the block at the left hand side of the engine when looking at the engine from the front. I am wondering if the power steering pump must be removed, and if the bracket has to be completely removed from the engine to seperate the head from the block...

usually the intake is bolted into the head. I have not worked on a newer V8 but I assume they are similar. I have always done removed the carb/dist/intake before removing both heads.
 
I can't believe I forgot to write which vehicle I was working on. It's a 96 Chevrolet Cavalier - 2.2L

Anyway, I got the headgasket changed, but now it's overheating and blowing cold air. I'm hoping it's air in the coolant, but I can't seem to get any frickin air out. I'm really hoping it's not the water pump, because there is now a funny noise around the belt pullies - why did I do this myself, sometime's it just makes sense to pay the piper and be done with it.

Anyway, if y'all have any advice for this over heating/blowing cold air stuff, that'd be great. Thanks for looking, and sorry for not posting proper info.

New problem sounds like you're right air in the coolant system. Is the thermostat opening, for one, second would be that the heater core is trapping air. If neither of these are the problem then you may still have a leak in the head gasket and it is pumping air into the system, usually this produces a pressure problem in the coolant tho.
