Are more bolts better, when it comes to beadlocks? I like the look of the ones with fewer bolts, but I imagine that you have more protection, maybe less leakage with the 32 bolt style.

I had 16 bolt beadlocks for about a year. In that year, I broke a total of 8 bolts among 4 wheels and fought leaks constantly. My constant tightening of the bolts to stop leaks was probably the main reason why I broke so many. They don't like to be overtightened.
After a year of dealing with that, I took the tires off, redrilled the same beadlocks to 32 bolts and remounted. In the following two years, not a single leak, not a single broken bolt. YMMV
 
As with all bolts, you should only torque them to the recommended value. If you torque them too much they have a prestress which means they don't take much more force, and then they break.
