Also, don’t over tighten! Didn’t think I was putting much torque on it but was using a long handled wrench. When putting the hose back on I heard a pop and it turns out the threaded portion separated inside the engine.

Let the o-ring do the sealing and don’t use too much force. This was Toyota part 12204-38010

I don't remember the torque spec, but it's very low. It's just a plastic part, and like you say, the O-ring does the sealing, not the threads.
