What to do with Leftover Seafood (1 Viewer)

Well, I'm asking this question because I bought a lot of King Crab to feed my wife as she just returned from a 3 week stay with her mom.
So, I was thinking the family n I would kill this stuff, but I may have bought 2X's what I needed.
I know some of you will recommend a seafood omelet, but I don't get up that early anymore.
And figuring that this stuff is expensive AF, I don't want to waste it.
Salad ? Ceviche ? Cold Pasta salad ?
What do you got Mud Fam ?

Still wondering, kinda like the cold pasta salad idea.
But it is spring, so ceviche may be in order, along with some shrimp, and scallops
and some good veggies, and hot chilies.

A little late...and hoping you aren't holding the King Crab this long ...Benedict with King Crab & creamed spinach. Add a chipotle or habanero hollandaise to it (subtract creamed spinach and just go with sautéed spinach) and you're home. That would be my go to for anytime leftover crab of any type was in the house.
