I have 12 quarts of WS ATF in the garage from my 100 series days that is 5 years old. i don’t see info online about shelf life. Unless there are reasons not to, I’ll use it in my 200 this fall?

If the container hasn't collapsed into itself like a black hole I'd use it. Oils do break down over time but ATF WS is supposed to be a lifetime fluid inside a sealed transmission in which case it's expected to last a LOT longer than 5 years in most cases.

That said I've had some brake fluid and gear oil where the container seemed to collapse into itself like there's a very small black hole inside it. Brake fluid in particularly is hygroscope and so I assume that was a sign it had deteriorated. Gear oil I would've thought lasted longer but since it was sitting in my damp garage it's entirely possible it too was compromised. Off to the recycler with that stuff!

If it hasn't been opened I would say go for it.

The WS in my tranny now is over 6 years old and I have no plans to change it, for at least 2-3 years until I hit 100K. Run it.

Sounds good. It's going in when I do the 60K fluid change thing in a couple months.
