I did a search and did not find what I was looking for, so the potential dumb and repetitive question.

I have a 2004 100, no AHC, 206,000 miles. Its bone stock but for the running boards. I asked my guy to go through the suspension and replace any rubbers and bushings as well as shocks and springs.

He suggested the Ironmam 4x4 Foam Cell Pro 2 Kit. It lifts about 2".

Stock tires are 275-65-18's. Looking at new wheels and perhaps 285-70's or 75's to fill the wells better and have a bit better stance. My off road is mostly deer camp or fishing and camping needs, nothing strenuous.

So the question. Would the 285-75's clear with the lift or cause any gear ratio issues.

What size rims and offset? 285/75/18 is huge and you'll need to trim a lot to fit esp if your rims have a higher lower offset than 30mm. 285/75/17 will be easier to fit and with a 2" lift it'll clear. However you should know lifting it doesn't change where it rubs, it just changes when it rubs when the suspension compresses.

If you're not doing anything serious, stick with a 275/70/18...that's plenty big and doesn't require any work to fit.
 
Stock tires are 275/60/18's which are 31". Your 275/65/18's are 32". The taller you go the more it will impact your gearing.

I assume the new wheels you're looking at are 17"?

Do you actually need or want a lift? A mild and very cost effective solution is 30mm coil spacers, adjusting the torsion bars to match and replacing the shocks with new OEM.
