I use the Alton brown turkey recipe. It's idiot proof and makes a fantastic bird. It's oven baked 100xs easier than smoking. But it makes a great bird for minimal effort.

I don't even let mine come up to temp. Light smoker, insert turkey, drink beer(s) and remove Turkey. Much easier than the oven in my experience.

don't forget call fire department - I think that falls somewhere in between fry and turkey for a lot of people.
