Yeah; my wife won't eat meat(freakin redheads:rolleyes::p:D). I'll be rolling out the vegetarian ones today. I crock up corn hominy, pinto, kidney, and black beans with garlic, pasillas, chipotles, some sugar and spices. Then I add sharp cheddar and roll them the same as I do the real tamales.

Going for some dessert tamales too. I've got some raisins plumping, and I'm going to add some pine nuts, brown sugar, honey, touch of molasses, and grenadine.



Yesterday: Elk, pork, beef, and extra bacon fat.

holy s*** dude....those look awesome and the veggie version sounds great. I've never made any tamales but i'll give it a shot...

I have yet to roll out the dessert tamales. I may try some chocolate. I think I even have some unsweetened Mexican stuff. I've still got some prickly pear jelly from the last time I jarred; may try a line of that to see what happens.

fawk. I better write some stuff down. It would be nice to jot down the failures so I don't repeat.

I'm thinking I may pack a cooler of these to surf and turf some year; they make great exhaust manifold lunches if you wrap them in foil.
 
I made some tamales for christmas eve and they turned out ok. This is the second time I made them. First time I bought pre-made masa and this time I made my own. I thought masa turned out well however I think I over cooked em. How long should they be cooked to get masa done? I did them for two hours from online recipe. That seemed too long and read on here to cook about 45 minutes. Agomez, what say yee on cooking time?
