Went to the Indio Tamale feastive on Sat, holy crap there is some good stuff, found that if your the only gringo in line, chances are its good. All the gringos were eating trendy tamales with fetta cheese and artichoke fillings while the good ones were pork and beef filled.........

the person who made tamales with feta cheese should be hung.

No s***, It was funny to see the different groupings, the Palm Desert folks buying the trendy tamales and the Indio locals lined up for a block for Mama Lupe's tamales..............
There were some vendors from Salinas and San Jose there too.

Mrs yooper and I made some fxxxing amazing tamales last week. We did two batches. One is beef and the other is peppers and cheese (not Feta! :vomit: ). They are in the freezer waiting for our open house Christmas Eve party, which is the family tradition. We always have tamales and chili made from scratch. There will be three chilis, a traditional one with beef, a veggie one, and a "white chili' made with chicken and white beans.

I've snuck a few of the beef tamales from the freezer for breakfast. Best ever.

We have no Mexican family heritage, I don't know how this tradition started, I think my father in law just really liked chile and tamales.

We pick 'em up at the post office...Got to have the prize (green olive with the pit) to be authentic imo.;)

Might have to make another batch of enchiladas this weekend to go with them..

That looks good. Is that a corn stalk with s*** wrapped up in it? Honestly , i've never had tomales that didn't have one of those Old El Paso tortilla type outsides.

what? Tamales are wrapped in corn husks yes. You don't eat the corn husk. They have no other wrapper. If you had something in a tortilla then it wasn't a tamal.

Do you squeeze the inside out into your mouth?
I figured you could eat the husk if it was cooked.

No, you unwrap them and eat what's inside. You can't eat the husk.

My recipe was to stop some of the little mexican ladies that would go around my apartment complex. I live in a "better" area now and I don't get the door to door sales.
