So I just bought 4 scs f5 rims. They are 16s. I was just wondering if it would be okay to use the oem 16 rim as my spare. Going with 295/75r16 toyo open country at2 xtremes all around. Should be fine right? Like what would be the worst that can happen?

Mate as long as they are the same size you wont have a problem

You will need to keep 5 stock lug nuts and appropriate wrench on-board.

The OEM wheel will work fine for temporary use. However, the offsets are quite different. OE is +60mm and F5 is +10..... roughly 2" difference. It might present itself similar to "torque steer" and pull to one side upon heavy acceleration. Also a difference in handling left vs right. Probably less noticeable when positioned as a rear tire.
