Everyone has a little tidbit here and there. We usually focus on the WOW FACTOR of what we post up. So, I thought we could have a sides thread to share with the group.

Mine for today, was spicy spinach casserole.


SPICY SPINACH CASSEROLE (side dish)​
3 pounds of fresh or frozen spinach
½ cup diced bacon
1 tablespoon butter
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 cup chopped mushrooms
2 tablespoons chipotle/puree
1 cup diced onion
2 tablespoons chopped garlic
¼ cup diced red bell pepper
1 tablespoon of seasoning salt
4 oz Velveeta (cut into 1 ½” squares)
4 oz cream cheese (cut into 1 ½" squares)
1 cup whole kernel corn
½ cup grated Monterey Jack cheese

Cook spinach in pot until limp but still bright green. cook bacon until crispy and drain drippings. Add butter to bacon. Add mushrooms, chipotle puree, onions, seasoning salt, black pepper, cayenne pepper, garlic, diced red pepper, and sauté until liquid is gone. Stir in Velveeta and cream cheese. Cook until cheeses are melted ( stir continually). Add spinach and corn, stir until smooth. Place in oven casserole dish. Add shredded Monterey jack cheese on top and bake at 350-375 until cheese has melted.

Serves 10-12 sides

Made some yummy risotto last night...but blew off photos :frown:
 
Made this tonightwith chopped up spinach as a dip with tortilla chips. Kids said it looked like barf, and it does, but it was good!
 
It cooks down pretty small...
 
Looks just as good as you described! She deserves a raise :D
 
No pics but here is what I did for a side with baby backs tonight;
Dice sweet taters to 1/2" cubes, I used about two cups for two people.
lay them out in a single layer on a piece of foil.
Drizzle with about one tables spoon of melted butter, 1/4 cup brown sugar and 1/4 teaspoon of salt.
Seal the foil ala papillote.

Cook over medium fire for about 30 minutes.

it's like a holiday in your mouth.
 
Looks great R! Big selection of small fresh local squash at our farmer's market this week...will try your dish!
 
Beets are in season here and they are candy sweet. So this is a good simple idea for swapping in beets for tomatoes this time of the year. Beet Caprese Salad. Pre-roast the beets and this would make a fine side-dish/appetizer on the trail!

Roasted beets; peeled and sliced
Fresh mozzarella; sliced and dried a little
Smoked sea salt; used chardonnay smoked salt here...milder
A good aged balsamic vinegar...or cheat and use your own/Trader Joe's balsamic vinegar reduction syrup
Fresh basil leaves
Drizzle of good EVO
