Need a bench grinder now to round out some 1/4" steel plate.

What should I look for?

Will 3/4hp do it? Or should I be really looking at 1hp?

Brand preference?
Craftsman Pro?
JET?
Palmgren?
Delta?

Bigger is almost always better. I have a Delta POS, don't know the HP rating but it leaves me wanting more. JET makes damn fine bench tools, don't know anything about Palmgren. Usually, the higher quality the tool, the more conservative the rated HP is. IME HP ratings mean little, they have changed the way they're rated so many times that comparisons between brands are futile.

Hmmm yeah I noticed some are rated by RPM's vs HP.
But yeah, don't want to buy something that's only good for sharpening blades etc...I need it to grind s*** away haha

If I were doing it again for hobbywork, I'd buy the biggest grinder Harbor Freight offers and beat it. If I were making money with it, I'd buy something better, probably used.
