Replacing Broken Birfield

How on earth can you keep out dirt, mud, sand, water etc. of the steering knuckle when you are replacing a broken birfield on the trail?
I have a hell of a time keeping sand out of the grease even after I clean the wheel wells and do the knuckle repack in the garage.

Do you just do as good as job as you can and then repack it when you get home?
Do you take apart the whole knuckle, encluding bearing, and clean out all the metal and trail crap? Do you replace the knuckle bearings or does the crap not work its way into the bearings?

Landtoy, Yes, you need to get out as much crap as you can. Do teh best job you can x 10, then re-do it at home.
