Recipes for grilled bison steak?

Anyone got a good one? Planning to do some up on the Weber when I get home in a few weeks.
 
Bison is normally pretty lean. Wrap the edges in bacon and grill it. If it sucks, add more bacon.
 
Bison is grassy beef, but taste more like earth/dirt.

what cut is it?

I'm honestly not sure what's even available to us. The GF found a bunch of bison stuff at a grocery store near our house so I'm planning on making a stop on my way home from the base the day I get back.

What're good cuts of bison to keep an eye out for?

There is a lot of different s*** going on in here.

you have to decide WHY you are actually going to eat bison. Is it because you want a lean protein or want to say you've eaten bison. Typically Bison is more expensive than beef and you dont get any benefit, other than being leaner, than eating grassfed beef...and that is not always the case anyway. Grassfed beef is very lean as it is, especially what you find in stores.

The "good" cuts from Bison are pretty much the same as Beef until you get into the strip loin due to the conformation of the animal. If i had to eat Bison and my druthers on a cut it would be the ribeye because it has more fat and less unpredictability of getting a s***ty piece of meat.

truth be told i'd rather eat Bison jerky than any Bison steak.

I've had bison burgers before and LOVED the flavor of it. AFAIK they didn't add anything to the meat, but damn it was good. I figured bison steaks would be something great (and new) to try on my grill.

Jerky's a good idea too. I'll have to look into that one.....

grinds are much different than whole muscle. You always add fat to grinds, you cannot do so with whole muscle steaks
 
Haven't tried bison steaks, but a local burger place here has great bison burgers.
