So I am getting ready to install a pair of rebuilt brake calipers that I just picked up from Napa. Do I need to bench bleed them first or can I install as is and then bleed them on the vehicle?

What would be the correct procedure to bench bleed a caliper (if there is one)?

I have a vacuum pump that I could use to pull brake fluid through the caliper but I don't see how this is different than doing it on the vehicle and pulling the fluid all the way from the master cylinder. Why not do it all at once and bleed the lines too?

Install them and bleed them on the vehicle.
