Question: Lifted but feels like "bottoming out" turning into driveway/over bump and system beeping

Sorry for the crap title, but just started noticing this last Sunday turning (left) into a driveway with a slight rise/little curb. I recently trimmed the hell out of my fender to stop any rubbing and noticed that it sounds like I'm bottoming out (kind of a "crunching" sound followed by a system beepbeepbeep. One thing to mention is I think I trimmed a little too much on the driver's side and since I didn't want the wiring exposed to potential rain splatter, (after coating wire connections with dielectric grease) I bolted on some additional plastic (highlighted in the pic). My buddy helped me try to recreate the sound it and it didn't seem to touch anything.

Not to make this post super-schizo, but that same Sunday when I was turning into a driveway, there was a loud crunching, that oh-s***-what-did-I-do type. I got out to inspect and it was dripping what appeared to be water, popped the hood and it was coming from the AC line that goes into the evaporator. (Pic 2). When leaving in reverse, and turning the wheel over that same driveway, it sounded like I was dragging something major. Got out to inspect and nothing - nothing hanging, nothing on the street, nothing. It also quit making the sound. It's hit or miss to try and recreate it, but I'm worried I'm failing to see something major.
