I need to get going on finishing the master bath in my addition. I have the opportunity to purchase a mis-cut double sink granite countertop for a good price. In this countertop, the sink cutouts are on a 31" center. My sink drain stubouts are on a 37" center.

I'm thinking I should be able to just rotate the P-traps to pick up that 3" on each side, right?
 
Maybe, maybe not, but you can piece together common parts to get the offset. It makes for more connections, which is to be avoided if possible, but it can be done. I would recommend against using the bendable parts, if you're tempted- especially in horizontal runs.

Went to look at it last night and didn't like the color, so I won't have to try.
 
You will have no problem off-setting the centerline of your sinks and the wall stub-out. Just rotate the trap as you said.
 
You can always use a 45 degree offset to angle your trap. Offsets come in 1 1/2 and 1 1/4 and have slip joints on each end. I usually cut them in half and use them as 45s on drains where the trap swing won't reach.
