Fresh eggs on chili is a great idea! Never seen that before.

I've done the grits and eggs deal thousands of times, and eggs on burgers are a regular occurrence around our house, but I've just never thought about Chili. Unfortunately, I've been in the garage all day. Just walked in the house and asked the wife what was for supper...sandwiches:crybaby::crybaby:

My parents only live about 2 miles from me and they raise chickens, so we get all the eggs we can handle.

I have some left over pork loin.. The wife is making a cuban loaf of bread in the morning for sandwiches.. I'll use OB's instead of the traditional mustard tomorrow...

I love fried egg on all kinds of things. As for a roti recipe if your talk'n about buss up shut :
5 cups flour
3 tablespoons baking powder
1/4+ teaspoon salt
I start with 2 cups water and add till I get a nice dough ball.
Now to make it you will need to go to YouTube and look up Caribbean pot making buss up shut. Hope this helps.

We changed the recipe a bit took OUT the msg & ramped up the other ingredients. I'll be posting something soon just waiting on labels to get in.

YEAH! THAT'S THE STUFF... Will try this out in a few days.

The wife and I like to cook together, its our "OUR" time so to speak... unwind and have a beer or two and talk about the day..

I'll be needing a bottle or two of the new stuff...

Did a tagine chicken with local honey, cinnamon sticks, rosemary, basil, mixed peppercorns, dried dates, onion, tomato, dried chili, & ginger.
Served on a bed of wild rice.
Boom!!! No finished pics just clean plates.
 
A couple of posts here...

Made Trini Roti and a special recipe from my friends Tomari and Leanza. I inquired about the roti recipe that Sean and Sara sent me.

First the Roti aka "Buss Up Shut" for Trinis... The best way I can describe this is it is a cross between a naan (flatbread) and a croissant .. JUST HEAVEN!

AND NOW... a very special Trini recipe from Leanza's family archive.. Island Curry Pork. This is not for the soft-tender palate of most. HEAT is an under statement with this dish and flavors just continue to pour out after every bite!..

I had some leftover pork loin and cubed/shredded it.. added the ingredients and... BAM! I need another beer.. OMG!! SO FREAKING GOOD!

I added some OB's to this because the habanero and caribe peppers were a little weak. The sauce helped bring up the heat and the flavors I wanted and remembered.
