When you are looking for a winch... Our trucks are around 6000lbs, if you get the truck stuck in the mud and I mean good and axle deep stuck, do you need a stronger winch to fight the mud? Would a good 12000lb winch with a good anchor point get me out of anything?

Would be a rare day when a good 12,000 lb. winch wouldn't keep you out of trouble. Got a 10,000 on mine and it does just fine.
With a snatch block and a double-line pull, pretty much yes.
