How close to level do leaf spring need to be? If one end is higher than the other will it cause any problems? how much is acceptable? I would figure that the front fixed end could be a little higher than the rear shackle end but maybe theres something I'm not aware of.

My guess would be that spring does not have to be level from end to end ( mounted on the same plane) provided arch (relative to centering bolt) positions the axle housing level, and alignment is attainable. Does this make sense?
