Prefer removable or foldable handle for easy storage and transport, prefer round although that's not a deal breaker, prefer deep ridges to facilitate grease drainage. I guess I would consider cast iron as well. I was looking at a round Fire Maple brand that has an odd Grease drain. I have a Calphon square pan at home with fixed handle that I like very much.
