Help with 100 build

Sorry in advance for the long post.
I have been lurking here for a while and have finally taken the plunge on an '06 TLC, fully loaded, 93k miles owned by a south Texas Toyota dealership owner. I have spent many hours doing searches on what to buy and have arrived at the following items. I'll be using it in Utah mainly on dirt and back roads- my SO isn't really fond ( as of yet) of anything very extreme. Having said that, she is adventurous and wants our first trip in the new rig to be across Nevada ( to visit her parents in Reno) without going on paved roads. It will be a daily driver ( mainly skiing every day in the winter and on back country trips and river trips in the summer towing only our whitewater rafting gear) and I want it to be very comfortable on the highway since it's 260 miles from here to Moab and points beyond and we are planning to travel to many points in the western US to see the back country. I could probably just leave it in stock condition, but am building it to use as an advertising tool for Moab Brewery so I want it to look good as well as being capable- one thing I have learned from this forum is that you can't be TOO prepared in the back country. My main question is about the suspension and how it could possibly negatively affect highway driving.

Slee blueberry bumper and winch
Slee rear bumper with tire carrier, ladder and jerry can carrier
Sliders
Suspension -2 1/2 " lift, including torsion bars, diff drop, rear coils, OME sport comfort shocks
Wheels and tires
front locker
The usual recovery gear- shovel, jack etc.
Down the road will be rear drawers, fridge, second battery etc.

Can't wait to see how this turns out! I love that place! Drinking out of a logo glass right now. For a photogenic truck you are of to a good start thinking Slee. Some very recent pics in the pic thread showing their stuff off.

OME with sport shocks has been great for my ride. I would also suggest talking to Mike at bump it offroad. Great service and products...the rear bumper I ordered is awesome!

OME shocks are a big step-up from worn-out OEM...but I've read many a post where folks prefer Bilstine's over OME.

With such a great starting point (low mileage 06) have you considered biting the bullet and getting Slee's new shocks?
 
I've got the OME torsion bars and 866 springs. It definitely stiffens the ride up to the point where you notice the difference but it is by no means uncomfortable. Once the rig is loaded it rides great. Handling wise I haven't noticed any real negatives on the highway.

I considered the new shocks but have decided that I want something I can install and forget until 75000 miles when I just replace them. Don't want the hassle of tuning, rebuilding etc. Went through all that with my M5. Also don't think I'll even come close to needing their capabilitied in terms of fast, rough driving.
