Gears with 35s or 37s

I'm about to begin the process of doing a SOA conversion on my FJ62. I plan on running 37x12.50 BFG muddy's and I'm gearing my axles at 4.88:1. If that helps any.....

Probably, 'cept he's in NEW ZEALAND and probably has some hidden stash of 80 series axles to choose from.

There are millions (OK maybe only thousands, but many thousands) of jap import 80 series driving around NZ that have the full whistles and bells lockers, console fridges etc. You still pay ALOT of money for an axle from a wrecker but I think the trick will be to bide my time and wait to see someone privately breaking one and then pounce. A '91 PZ70 with front and rear lockers and recently econditioned drivetrain recently sold on an auction site for $3500 NZD! I was drooling over that one but just didnt have the cash to throw at it at the time and it got snapped up.
 
I built a 78 Fj40. I swapped in a 1Hz and H55f into it and kept the stock axles . I am running 35" tires and 15 " wheels. What gearing do you guys think I should go to to keep decent fuel economy and good highway manners ?
I want it to be a bit of an all around truck if that's at all possible.
