Is it possible to just disconnect the VSVs when desmogging or will this confuse whatever electronics control the thing?
The VSV's can be disconnected. They will not cause any fault codes in the "computer".

It ain't NEAR that smart

Also should the leads that came from the OC thermo sensor (in the cat) be jumped or just left alone? Or does it even matter?
They can be left alone. The temp sensor is for controlling the AIR system. That's usually the first thing to go when desmogging, so it no longer matters what the sensor is thinking. If removing the cat, or replacing w/ a cat w/ no temp sensor, the wire can be snipped off flush w/ the floor. That leaves a rubber plug in the hole in the floor. The wire can then be disconnected from the body harness at it's connector under the driver's seat.

i had to keep the sensor on the carb connected otherwise it wouldnt idle proper...

cats gone wire is dangling....still gotta take it out
There is no sensor on the carb that affects idle. Some years have a carb temp sensor to supply control input for EGR, but that doesn't affect anything at idle.

There is an idle cut solenoid on most carbs. It needs to be connected to +12V to allow idle fuel.

Just snip off the cat temp wire. Not needed anymore.

not sure what the sensor was for...hadnt got that far cuz it was running like crap until i plugged it back in while it was running and instantly smoothed out...so i left it connected....everything EGR has been removed and all wires left dangling so far...it runs great and i just took it wheeling this weekend....what a difference...
