One wild acorn fed Woody breast cut into chunks
Phil Robertson's Cajun Rub
Bacon strips cut enough to wrap each chunk
Top with some red onion slices
Grill on ribbed pan

Add a grilled asparagus side...

They taste as delicious as they look :cheers:

Love to killem........H8 to eatem. Taste too much like liver for me.

Best I've had:

Marinate for 7 days in 50/50 red wine vinegar and zesty italian. Slice thin and let it 'fly thru the broiler'.
 
breast them, wrap them in bacon with a jalapeno (or other pepper)
grill them til done
serve them with a sauce of apricot jelly and chipotle sauce

We use orange marmalade on them as well wob. I just didn't have any last night.
 
could not agree more. Never been a duck fan, way too much of a gamey greasy taste for me. fun to pow pow though

Woody is not like that at all bro.
Wob will tell you, it's like flying tenderloin tips.

I got some Mallard marinating in teriyaki right now for tonite. Gonna have to jazz those up a little, not quite as good as woody.

Pheasant is the best game bird, best tasting..
I shoot pheasant all the time, but basically got tired of eating them. I'd venture to say they're better than chicken and there are many good camp recipes for the pheasant. I'd eat a nice restaurant duck any time before a pheasant.
 
First off, If you don't like to eat duck your a puss.

I like to take around 4 nice Greenheads and pluck them real good. I take my game shears and cut the back bone out. Soak them in buttermilk for 24 hours. Pull them out of the buttermilk, and rinse well with water. Cut up onions, and apples to stuff. Lay breast side up on elevated rack in covered dutch oven. Salt and Pepper. Cook at 325 until the meat is falling off the bone.

Serve with wild rice, and a green vegetable.

How can you associate greasy with a duck? Obviously this is a wild duck and they are very, very lean.:confused:

I agree. Have you ever tried just searing them and eating them rare to medium rare? That my friend is flying tenderloin.
 
lean doesnt mean it cant be greasy and gamey

I agree on the gamey part but there is nothing greasy about a wood duck unless you make it greasy. That pretty much goes for all migratory game birds.
