Does anyone know which wire does what for the steering wheel molex and the clock spring molex or how I can figure that out?

My guess would be each just sends a different canbus message, but perhaps that happens somewhere in the dash and those are analog signal wires. If they are all you need is a multimeter.

It would help if we knew what you're working on. The electrical wiring diagram (EWD) and the service manual for your year and model truck are in the Resources forum, 100 series section. Download both of them. They're free. They're the only tool you need.

The the FSM, including EWD, for all years and models is in the link I posted as well.
