Did a long trip in my 80 about 1.5 weeks ago. Everything was great, ran good, blah, blah...

Well, my coolant seemed fairly normal and I drove back and forth to work for three days then parked it on Thursday and flew out of town. I just got a new company truck so I have not started it since Thursday.

Well, I just went out to start installing my dual battery setup and realized that the coolant bottle looked very, very low.
There are no leaks I can find and my last Blackstone oil test came back completely free of coolant and water a few weeks ago. Also, there have been no fluctuations in temps.

Is it normal for the coolant to settle back into the engine if it sits for a week without being started or am I losing coolant somehwere?

No.

Possibly...

You need to do the ol' "check the overflow level every morning when cold" routine and let us know what you find after a few or more days.
