Clear Roof panels

Never seen them turn yellow although they are available in different colors, maybe that's what you saw? In any case polycarb is the currently the best material around for clear roof sheets.
 
Most clear plastics will yellow over time. Look at the headlights of most newer cars. The surface of the lens yellows from UV and chemical exposure. That said, I'd still go for the clear or semi clear roofing on a shed or garage. I figure in 15 years I'd have to or want to replace the roof anyway.
 
We use those polycarb sheets a fair bit over here Ron and I have yet to see ones that have turned yellow. Not only that, they are super tough. Had a mate of mine put his foot on one a few months ago whilst working on a roof and he bulged it a fair amount. I got underneath and pushed it back up and there was no damage, not even discoloration at the points where it had flexed. To screw them down just drill through with your roof screws, no need to drill holes.
As Trent says, most plastic do yellow over time and I am not going to say this stuff never will but if you want clear roof sheeting polycarb is as good as it gets.
