DING DING DING!!! We have a winner.

The key to good Bayo is to filter the Bacon grease with a fine cheesecloth filter so as to remove all of the particulates.This allows for a creamy texture not unlike normal Mayo.

It really is quite scrumptious.

I have a bottle of Baconaisse in my fridge right now - no kidding. The stuff is awesome! Great on a turkey grinder from "Uncle Sams". MMmmmm

So...Bman seems to have this [STRIKE]bad[/STRIKE] no so bad rap about bacon - what gives. Backstory?

Maybe best told around the campfire this weekend with some cold suds and some bacon wrapped filets in hand!
