After reading through a number of posts, I’ve settled on the Bilstein 6112/5160. My question is ease of install using Quick Jacks. I’ll have the fronts preassembled, so my concern is with installing the rears. Any advice is appreciated.

Not sure what would be unique to a Quick Jack. There's nothing unique to the 6112/5160 installation versus any other suspension install on this platform. I've done it on this and other platforms with 2 tall jack stands, 2 short jack stands and a floor jack.
I do recommend the 6112s, mine have close to 100k miles on them and still feel great!

Nothing unique per se, but likely able to get more clearance/more suspension drop than with a floor jack jack stands.

Maybe, but getting enough droop on Tall stands with the wheel off has never been an issue for me. Make sure your Quick Jack has enough load capacity, it looks like all but the 8000 models would be pretty marginal for the weight of one of these pigs.
